Salento cuisine originates from simple ingredients, but contains a wealth of flavours and creativity that captivates at first taste. Once referred to as “cucina povera”, today it represents an appreciated and rediscovered gastronomic heritage. At the Restaurant Le Scalelle, as well as at the Hotel ‘La Collinetta’, we carefully revisit these ancient recipes, enhancing their authenticity and balance. Dishes that were once born of necessity now become true taste experiences, prepared with passion to satisfy the most curious and demanding palates.

Born in 1991, Giuseppe Strambace is the chef who signs every dish at Le Scalelle Restaurant, transforming the Salento tradition into a surprising and contemporary culinary experience. His talent has also been recognised at national level: winner of the Gold Medal at the third edition of the “Trofeo Barocco Cuochi”, Giuseppe is an authentic interpreter of local cuisine, capable of reinventing it with flair and technique.
His philosophy starts from a simple principle: respect for the raw material. Each ingredient is carefully chosen, favouring local and seasonal products, and then enhanced through unusual but always harmonious and elegant combinations. The result? Dishes that tell the Salento with a new voice, without ever betraying its essence.
With a keen eye for aesthetics and the balance of flavours, Giuseppe brings to the table an idea of cuisine that combines emotion and awareness. His creations know how to amaze without ever exaggerating, they play with textures and contrasts, but always maintain a deep connection with the gastronomic memory of his land.
